Make this for your Next Gathering: Easy Southern Style Potato Egg Salad



Since Summer is here, bring on the BBQs, Get Together’s and Family Reunions by having a salad that people love to eat! Every family has a potato salad recipe they love to cook and I am going to share the recipe given to me by my mother in law. She has always known I love to cook plus she gave me an insight on what foods my husband loves to eat during summer parties. Ever since she showed me how to make her potato salad I haven’t done it in any other way. Hey it doesn’t need to be summer to have this salad!

What do you Need


1 bag potatoes (I like white or yellow)

2-4 eggs

1-2 Tbsp. of sweet relish

2 Tsp of vinegar

2 Tsp Spicy Mustard or Yellow

Garlic salt and pepper to taste

1 small onion (optional)

Paprika for garnish


What to do


Clean and wash your potatoes. After clean peel your potatoes be careful not to cut yourself. Once all your potatoes have been peeled, cut them in medium to large squares. Place in a large stock pot and bring to a boil.

Tip: During this time you can cheat and place your eggs in the water with the potatoes. This in turn saves times and saves another pot from needing to be cleaned.

Once Potatoes have soften, drain and cool. Peel your eggs and set aside in a large bowl.


Tip: You can leave one egg to cut to place on top for garnish.

Chop your onions finely then add to your bowl with potatoes and eggs. Add remaining ingredients and mix well.


Sprinkle some paprika and pepper on top. Place remaining sliced eggs on top (Optional)
